Nice smoky notes and clean finish. I haven't had time to mix a cocktail with it yet, though. I had a Paloma Blanca at Emeril's Delmonico with this as the spirit, which inspired me to purchase this. Good enough to sip neat and cheap enough to enjoy in a cocktail. Flavor wise it has all the basic elements of mezcal going on. Its well balanced, not heavily smoked, and has a clean finish. Its not very complex like many of the more expensive mezcals but don't let that keep you from enjoying it. Xicaru Pechuga Mole is a celebration of two Oaxacan traditions: pechuga, a mezcal that is distilled with a chicken breast and traditionally reserved for special occasions, and mole negro, the iconic Oaxacan sauce. The agave Espadin used in this mezcal is cooked in an underground stone oven, tahona-mashed, fermented in open-air pine vats, and distilled over a wood fire. The mole negro is made from scratch over two days at the palenque, using molcajete-ground chilis, Oaxacan chocolate, and other fresh ingredients. Tastes like burnt pineapple flesh with an assertive ethanol bite that comes on far too strong for 81 proof. Not a lot on the nose or flavors mixed into the Agave.
