She pours three types of mezcal into the copitas, then places orange slices and spreads a generous amount of sal de gusano, dehydrated seasonings mixed with salt, on the board. The mezcal brings on a warm feeling as the spirit goes smoothly down. The accompanying orange and sal de gusano help bring out the flavors in the different mezcals, emphasizing oaky notes from the barrels it was aged in or the varied levels of agave sweetness. This is the traditional way of enjoying tequila and mezcal that Sanchez, the owner of Viva Tequila, Salem's first tequila-centric bar, hopes to bring to folks. Viva Tequila is soft opening in North Salem in late January. Sanchez said she hopes people will be open to learning about the spirit in its varied forms as they enjoy it at the bar.
