Pavlova is a central part to any Christmas celebration in Australia, and you can make yours even more spectacular with this towering tropical meringue Christmas tree recipe.

The meringue layers can be made and stored in airtight containers between sheets of baking paper for up to 2 weeks. The meringues can also be frozen. Line 2 large baking trays with baking paper. Using biscuit cutters, saucers and plates as guides, draw 5cm, 7cm, 10cm, 12cm, 15cm and 18cm circles on the paper.

I used some little raspberry coconut truffles and some white chocolate stars and hidden between each layer its raspberry compote and fresh raspberries with lots of cream. The little truffles are my spin on a popular treat i grew up eating here in England called coconut ice. I added some fresh raspberries to them as they are incredibly sweet. I added a little coconut cream with some fresh cream and whipped it up to carry the raspberry, white chocolate and coconut flavours through out. The candles are the last thing to go on and are purely for a wow factor just before serving. For other Christmas show stoppers see my dulce de leche ginger cake or my chocolate log cake. I wanted the bottom three layers to still be like a traditional pavlova, soft and chewy in the middle with a little space to add the filling. I only have a small oven so it was a bit of a squeeze, so i made half and then baked it and then made the other half. Amazing cake for the most important birthday of the year! This looks absolutely amazing!
Top with more cream mixture, some kiwi fruit and Rafaellos; drizzle with some of the passionfruit.

This pavlova is a soft, fluffy and easy to portion up dessert made up of 7 layers of fluted meringue rings, whipped vanilla cream, raspberry sauce and fresh raspberries and redcurrants! I called her Jolene. I know that traditionally a Christmas pudding is what you serve at Christmas but I feel that that's more linked to colder climates and snowy weather. I love making pavlovas and things that suit our summery Christmases more.

Place each star template beneath the parchment and secure with scotch tape.
