I decided the perfect way to celebrate the new decade was with a janes patisserie cupcakes that everyone has been requesting for a very long time — prosecco cupcakes!

They are cosy, and heavenly, and because its the winter festive season I thought they were the perfect cupcake to celebrate with. Honestly, I started going to cafes purely for hot chocolates as one point because I was just obsessed. I adore them. I was a regular at a few coffee shops and they learnt my hot chocolate order very quickly. For the cupcakes I followed the same idea as my normal chocolate cupcakes because it really is a simple switch.

Please see my disclosure for more details! So the time has come, to morph my chocolate fudge cake into the very sort after chocolate fudge cupcakes. These are the most incredible cupcakes, so here they are. If you are after something delicious, but easier and more basic, then check out my chocolate cupcakes recipe! This sort of cake mixture is a lot thinner once you have made it, in comparison to a normal cake batter like a chocolate Victoria sponge. When I make it, I really just use my hand and a whisk and a spatula… there is no need for an electric mixer for these cupcakes as the batter is so easy to mix together. Melt the chocolate and butter, add in the dissolved coffee, whisk all the dry ingredients together, and whisk the eggs, vanilla and buttermilk together and you have a cake! I then use it up in another batch of cupcakes or use it in another recipe. The decoration of cupcakes like this is so easy, and I just adore something that is quick and easy to achieve. I went for adding my delicious chocolate fudge frosting to a large piping bag with my favourite piping tip, and swirled it onto the cupcakes. Find my other recipes on my Recipes Page! Yes, that is right, I thought I would start off with an absolute bang and do something that I get requests for over and over all of the time… this beauty of a recipe. I have many gingerbread recipes on my blog such as my gingerbread loaf cake , my gingerbread millionaires shortbread , and my gingerbread trifle just to name a few… but cupcakes? Cupcakes are where it is at as they are easy, simple and delicious. A gingerbread cake is meant to be denser, fudgier in a way and just absolutely perfect for the colder weather… and these gingerbread cupcakes emulate that exactly. This sponge uses butter, dark brown soft sugar, golden syrup, and black treacle melted together in a pan — this bit is important as it makes sure that everything will incorporate really well. I use dark brown soft sugar and black treacle as I want the deep flavour, but these can be switched to light brown soft sugar and just golden syrup if needed. The mixture uses self-raising flour in comparison to plain flour as the raising agent comes in handy for cupcakes — and I love it slightly lighter in cupcake form. The spices I use in my gingerbread cupcakes are simple ground ginger and ground cinnamon. You do, however, use a reasonable amount of milk.
