Lasagna is a favorite with my family. Even more well received than Pastitsio! The butternut squash, pasta and kale ricotta come together harmoniously and deliciously. The butternut squash sauce is truly simple to make.

I cannot talk this dish up enough. Its incredible in taste and is super easy to make. The hardest part is slicing the squash thin but then the rest of the recipe is a pleasure to make in less than 5 minutes. I start with spraying my baking dish with olive oil. Then the first layer of the vegetable goes down, overlapping each piece.

I am not lying when I tell you I ate them all by myself. And its definitely all thanks to that saltiness of the feta combined with the sweetness of the vegetable. Soo good! I will definitely make this on a regular basis. The butternut squash is perfect. Why did the recipe call for 12 noodles if assembly calls for 9?
