HORL are creating a revolution in sharpening with their innovative line of rolling knife sharpeners. Many of you will likely have seen their system popping up in various social media feeds, especially if you have any interests involving knives. Though primarily aimed at sharpening kitchen knives, having given the system a quick try out at IWA , I was intrigued to test it in more depth and with other types of knives. Join me in this HORL 2 knife sharpener review for a closer look at this new approach to guided sharpening. HORL also sent the tea towel and branded plasters. Inside the box are a couple of printed guides, and the two main components, the rolling sharpener and the magnetic guide block. The precisely finished wooden guide block has two angled ends, 15 degrees and 20 degrees. The ends are marked with their angle and have a rubber surface to cushion and hold the knife. An optional extra that goes with the sharpener so well you really should get it, is the storage block. Available in either of the two woods used for the sharpeners themselves you can match the sharpener or go with a wood contrast. The block has two cut-outs, one is an angled pocket to sit the rolling sharpener in, and the other is a slot that has a couple of bolt heads which the magnetic guide block grabs on to.
If it cuts through easily and neatly, without any residual water, your blade is sharp. This leaves a lot of room for mistakes, such as uneven sharpening.

The HORL 2 knife sharpener is a manual grinding solution that applies a new principle: where the traditional principle is to have a fixed stone you drag the knife across, the HORL flips these two. Here the knife is held in check with a magnet and instead the stone is rolled back and forth along the knife blade to sharpen the knife. The advantage is that the angle between the stone and the knife can be held constant. An amateur knife sharpener like me struggle to keep the angle constant and that is the safe route to failure. So here the HORL 2 comes to my rescue with a solution to keep the angle absolutely constant during the grinding. The solution itself is therefore simply a little magnet to fix the knife and a grinding stone on a rolling device. Thats basically it, along with a quick guide and a more detailed instruction. I think it is a lot of money for a knife sharpener, but my logic is that I have around 10 knives which makes up a significant investment, and as I do not have the skillset to maintain the sharpness of the knife with a traditional sharpener, the value of my knife portfolio is steadily declining. My hope is that the HORL will bring my knives back to tip top shape, and in that light, I can justify the investment. I thought the main downside of the budget version was the replacement of delicious oak wood with plastic, but it turned out that the budget version only comes with a 20 degree angle and not both 15 and 20 and that the grinding disc cannot be exchanged!

The system makes it possible to sharpen knives easily and precisely for professional-level results in everyday use and TLE have been asked to try out the HORL 2 sharpener. A family business, HORL is owned by father and son team Otmar and Timo Horl, who have been honing incarnations of their knife sharpener since in their hometown of Freiburg in southern Germany. The brand sees the entire crafting process from start to finish, onsite. The diamond disc, sharpener and angle supports will last a lifetime, the honing and corundum stones have an average expectancy of three to six years. Traditionally, knife sharpeners function by moving a knife over a sharpening stone.

Both are marked on the back of the disk with the grit. The strop works best when used at the very end, after using the stone. While this will happen naturally with time and use, introducing a knife to these angles will give you the best, most noticeable results from the get-go. This makes the blade achieve its pinnacle sharpness, while giving it a shine so bright it looks brand new. Grip the rubber wheel firmly and simply unscrew the stone you want to change; then screw in the replacement. On the roller of any HORL 2 sharpener , you will see two discs on either side: A coarse disc for sharpening, and a finer disc for honing. The mark left by the pen should disappear. Read our interview with Timo here. These are found inside matching storage tins, wrapped in a cloth square. This happened a couple of times in the video when turning the sharpener to work the tip of the blade, and prompted me to abandon the ceramic stone for a blade with curved tip like this.
En poco tiempo, los afiladores de cuchillos HORL 2 se han hecho muy populares. Empezar con un cuchillo viejo es algo que recomiendo. Muy diferente a las piedras de afilar a las que estoy acostumbrado.
This makes the blade achieve its pinnacle sharpness, while giving it a shine so bright it looks brand new. Since then, similar types of knife sharpeners have cropped up in the market — but HORL exceeds all of them in terms of quality. A HORL 2 sharpener , by contrast, does not need the minute soak because no significant heat is generated from the sharpening process. Finally with the grooved ceramic stone of the HORL 2 and the tip of a knife with a curve there is a possibility of the edge catching into the groove. The HORL 2 sharpener and angle supports will last a lifetime. Synthetic diamonds are used to make the disc. While this will happen naturally with time and use, introducing a knife to these angles will give you the best, most noticeable results from the get-go. A whetstone is the gentlest way to sharpen a knife, and very effective. It has two sharpening angles of 15 and 20 degrees to obtain a finer or more stable edge according to your needs. The rolling knife sharpener was invented by Otmar Horl in , and brought to kitchens around the world by his son Timo Horl since Once the diamond disc has been used, the ceramic disc must be used to leave an even finer finish by removing the remains of the previous process thanks to the grooves on the blade.
