This small restaurant, nestled in a pink year-old building on Saint-Urbain Street, is a multi-sensory experience like no other in the neighbourhood.
By Jessica Prupas July 11, But what about your line cook, busser, and dishwasher? He and associates Hideyuki Imaizumi, Sebastien Langlois, and Kris Guilty got to work designing a restaurant to host such an experiment. The resulting space—housed in an instantly recognizable dusty pink 19th-century home—puts food prep stations at the center of the dining room, ensuring that those plating the chicken nanban , chirashi sushi, and katsudon feel like part of the service team. The 10 or so employees often rotate duties, so that those serving one night might be rolling sushi or scrubbing dishes the next. Owners, too, help out where needed; even Schmidt has taken his turn bartending and washing up. Management duties, meanwhile, are divided among a handful of employees, who earn a slightly higher hourly rate.

New Chinatown snack bar Fleurs et Cadeaux was open for a scant two weeks before a troubling rise in coronavirus cases in Montreal forced it to flip the script to takeout on October 1. What if instead of having someone in charge of the front of house and another of the back of house, you had a panoply of managers, each responsible for fewer tasks — and maybe no real front or back of house at all? Thinking of the inherent connection between the design of a space and the behaviours it invites, Schmidt began toying with the idea of a restaurant layout that would support that. Tips are also split equally and base salaries are kept around the same range. With each one, he seems to have come one step closer to the decentralized approach enacted at Fleurs et Cadeaux. At Tiradito, which opened in , there are no tables: Just a long bar counter that encircles a central area where chefs prepare food and drink, as though actors on a stage. They handle everything.

Fleurs et Cadeaux's an all-new Chinatown arrival coupling Japanese snack bar takeout with playlists—plus plans for speakeasy-style listening bar in its basement. Located inside of what once housed a gift shop of the same name, Fleurs et Cadeaux's building has roots stretching back to the s, and most lately had been a flower and trinket shop for the last 30 years. They've kept the facade and colour to pay homage to the neighbourhood minus a fresh coat of paint , giving the whole place a bit of a speakeasy vibe. Schmidt says that the Fleurs et Cadeaux team had planned the project as early as January, but with the financial upheavals and construction delays caused by the pandemic prevented the restaurant and bar from manifesting in their previously planned timeline.
