Fallout: New Vegas. I have also completed "King's Gambit" by plasma-rifling Pacer in his sleep, thus casting blame on the Van Graffs. Now I'm actually about to go to Silver Rush and kill them all in order to loot the place. But are there any more quests that involve fighting the Van Graffs? Should I wait for those quests to come about or is it okay to kill them now? I don't want to lose the XPs if there are quests available.

Pretty sure they're the only place in the game where you can get the Plasma Caster, and unfortunately they don't sell it. You'll either have to kill them or do something silly like drag the Plasma Caster into a corner of the room so you can safely steal it. Anyone scared to kill them over losing a "good energy weapons" vendor must not be aware that the BoS have a better shop for energy weapons than the VG. Just complete all the BoS quest and gain access to their "entire" store. They sell energy weapons and ammo and you get free MF cells in the case at their entrance.
