I love Summer Fresh salads, but sometimes I do not have access to them! We are all about homemade meals and such, but sometimes there is a meal out there that stands out and you cannot resist it. That is the case with Summer Fresh and their salads. I absolutely love them! So convenient and hearty, I could eat them all day every day no affiliation, just stating my love!

I figured it would make an easy meal on a hot summer day, so I picked it up on my last Costco run. The main ingredients are red lentils, wheatberry rice, couscous, moong beans and pearled barley; there are also a few navy beans and some small pieces of onion and red pepper mixed in. The main thing I want to point out is how flavorful this mixture is! You can taste the sweetness of the honey and the saltiness of the soy sauce, plus a bit of tang from the vinegar.

I prefer homemade, anyway, so this one looks perfect! How does the cost of the copycat version made at home compare to the Costco? This came out pretty good, although I didnt have bell pepper, kale, or cilantro and used white vinegar instead. Of course, canned beans would work perfectly here and are probably much preferred.
