Here, the bistro favourite steak tartare might be elevated with porcini mushroom and slices of Tasmanian truffle, while the gravlax plate sees salmon swapped out for cured kingfish topped with beetroot puree, fennel and homemade buttermilk blinis with kingfish rillettes.
