Despite being smaller than its cousin cod, growing up to 1m in length, angel cut haddock, haddock is the undoubted star of fish and chip shops in northern England and Scotland, its flavour being slightly sweeter than cod. Whereas cod is bright white, haddock has a more muted angel cut haddock and is less flaky.

Just like cod, haddock are demersal — bottom feeders with a goat-like piece of skin under their chin to help them locate food at murky depths. The fish spend most of their lives in deep waters between 40m and m and have an average lifespan of between three and seven years.
